This just in from a new to the marke specialty food entrepreneur:
"Question or Comment: I have just started a small gourmet dessert business out of my home. I am a small corporation and fully inspected by the FDA. I have a small crowd interested in my product line already, but I am having a very difficult time with pricing issues. My business partner, who is my husband, thinks that I am aiming to low and will not make any profit whatsoever. I am in need of finding an objective source/Mentor with whom I can freely discuss ideas and be able to resolve business decisions involving pricing and other business issues. I am new to the food business and I trying to find ways to network in the local food channels in my area. Do you have any suggestions for a startup food business venture like mine as far as mentorship and coaching is concerned that will be at low cost to me at this time."
My experience with this is that women very much tend to under price their products. I don't think they under value them in terms of quality and presentation and goodness, but that they are (and I was) very wary of pricing at full value. Men seem to just go for it and people pay the price if the value is there. Doesn't mean your husband is right but he may be.

Have someone do a cost analysis with you. Down to the penny. I am just starting too and having a hard time with this, but think that you have to make money. You have to charge enough so that your time is not wasted.
