I'm starting a small food business where I will be selling a "Microwave Pork Rind" product via my website. My state (North Carolina) has excellent resources to help food startups through the NC State University Dept. of Food Science. However, I cannot find any information regarding the regulations for selling a food product (pork rinds fall under the USDA because they are a meat product) that is already processed and prepared by the manufacturer who has the USDA seal of approval. I puchase the pork rind "pellets" from a few different manufacturers....essentially, I just package the pre-made pork rinds in convenient, easy to use microwave-ready kits. Any consumer can buy the pork rinds directly from the manufacturer. The value added angle I am working here is a healthier product (not deep fried) that is easy to prepare. There are only a few companies doing this and they are a big hit with the low-carb crowd. Any information regarding regulations/inspections I may need would be extremely helpful.
