I have a recipe for a cheese ball that I would like to take to market. Where should I start to determine the shelf life and if additives are needed to increase shelf life?

Here is a reply I received from a vendor that may be of interest: Yes, this is what we offer through our Shelf Life Evalution service. We will advise on current shelf life and let the client know what formula changes (including preservatives) and/or processing or packaging changes they can make to achieve their shelf life goals.

The cost is $550 per product and turnaround time for Standard service is 3 to 4 weeks.

You should contact the
North East Center for Food Entrepreneurship
www.nysaes.cornell.edu/necfe
They will be able to help you with either reformating the recipe or possibly changing the packaging which would keep the precipe but increase the shelf life.
