Hi!

I would like to seal my jars (removing the air) so that they may sit on a shelf as opposed to having to be sold in the refrigerated section. Has anyone come into contact with a device that can do this by the group as opposed to jar by jar? I use "regular" lids, not those found on top of mason jars.

I know that a co-packer would provide this service for me; however, I am not at that stage yet. I do all the steps thus far. Perhaps I am stuck with the "cold section" until I get to the next level--but, thought that I would inquire nonetheless.

There is quite a bit more to having the product be shelf stable than getting the air out of it. Can you tell me what kind of product it is and I might be able to offer more guidance.

Raw nut butters. They should last about 6 mos. if the air is removed.

Unfortunately I don't know of any system to seal jars in bulk for that application. Certainly their are methods for doing that in production involving nitrogen flushing but nothing I know of for small scale. Sorry ;-)

Hi! I believe you are wanting the "hot fill method" to seal your jars. I am working on that process also. I'm havin a hard time finding a table top hot filler to put my chutney/relish in the jars while it is hot. Anyone out there know of where to find such a thing for small scale product production?
