Do any of you use powders, specialty powders, in the production of your specialty foods?

If so, can you share with me the types of powder?

I was not completely sure if you were asking for where to get powders, or testimonials on powders that work??

You can get many specialty powders from Commercial Creamery in Spokane, Washington... their specialty is cheese and dairy powders, but they also offer BBQ, jalapeno, and many others. Even shortening, and margarine can be obtained in a powder.

You can also get many powders from manufacturers (e.g. Tabasco, French's).

And of course if you are looking for emulsifiers... gums, pectin, etc there are many suppliers. We use Pacific Pectin out of California, good, fast service.

Probably a good idea to subscribe to the free trade publication, Food Product Design. They the most active powder ingredient players often advertise there.

Another great resource is Food Master, where you can find about any commercial quantity ingredient product (for example peanut butter powder).

I have used cheese and BBQ powders from Commercial Creamery, very good products. I've done some product development work with Tabasco's jalapeno powder but have not commercialized yet.
